Coconut Banana Chocolate Cake

Ingredients

– 2 ripe bananas, mashed – 1 cup all-purpose flour – 1/2 cup unsweetened cocoa powder – 1/2 cup shredded coconut – 1/2 cup sugar – 1/2 cup melted coconut oil – 2 eggs – 1/2 cup coconut milk – 1 tsp vanilla extract – 1 tsp baking soda – 1/4 tsp salt – 1/2 cup dark chocolate chips (optional)

Instructions

Preheat your oven to 175°C (350°F). Grease a 9-inch cake pan and dust it lightly with flour or cocoa to prevent sticking.

In a bowl, mash the bananas and mix with eggs, sugar, coconut oil, and vanilla. Stir in coconut milk until smooth and fully combined.

In another bowl, whisk flour, cocoa, baking soda, salt, and shredded coconut. Gradually fold dry mix into the wet ingredients until just combined.

Fold in chocolate chips if using. Pour the batter into the prepared pan, smoothing the top evenly with a spatula.

Bake for 30–35 minutes or until a toothpick inserted comes out clean. Cool before serving. Top with coconut flakes or ganache if desired.
