Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it with cooking spray to prevent sticking.
In a large bowl, mash the ripe bananas until smooth. Stir in the melted butter, mixing well to combine for a rich, moist texture.
Add the sugar, beaten egg, and vanilla extract to the banana mixture. Mix until fully blended and slightly creamy in consistency.
Sprinkle the baking soda and salt over the mixture. Stir in the flour and mix just until the batter is fully combined. Do not overmix.
Spoon the batter into muffin cups, filling each about 2/3 full. Bake for 18–22 minutes or until golden and a toothpick comes out clean. Cool before serving.
