Grease a baking dish and fill it with cubed bread. In a bowl, whisk eggs, milk, cream, sugar, vanilla, cinnamon, nutmeg, and salt until blended.
Pour the egg mixture evenly over the bread cubes. Gently press the bread to soak fully. Cover and refrigerate the dish for at least four hours or overnight.
Next day, mix brown sugar with melted butter and pour it over the casserole. Preheat oven to 350°F (175°C) and let the casserole sit at room temp.
Bake uncovered for 45–50 minutes or until the top is golden and center is set. If browning too fast, cover loosely with foil for the last 10 minutes.
