– 1 cup rolled oats – 2 cups milk (or almond milk) – 1/2 cup grated carrots – 1/2 tsp cinnamon – 1/4 tsp nutmeg – 1/4 tsp salt – 2 tbsp maple syrup – 1/4 cup chopped walnuts – 1/4 cup raisins – 1/2 tsp vanilla extract
In a pot, combine 1 cup oats and 2 cups milk. Heat over medium and stir until it begins to simmer gently.
Add 1/2 cup grated carrots, 1/2 tsp cinnamon, 1/4 tsp nutmeg, and 1/4 tsp salt. Stir and cook for about 5 minutes, until soft.
Mix in 2 tbsp maple syrup, 1/4 cup raisins, and 1/2 tsp vanilla. Stir well to combine and simmer another 2–3 minutes.
Once thick and creamy, remove from heat. Fold in 1/4 cup chopped walnuts just before serving for a satisfying crunch.
Spoon into bowls and top with extra walnuts or a drizzle of maple syrup if desired. Enjoy a dessert-like breakfast that's wholesome too!
