Stir until just combined; avoid overmixing. Divide the batter evenly into muffin cups, filling each about 3/4 full for best results.
Bake for 18–22 minutes or until a toothpick comes out clean. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool fully.
